Cooking and Baking with SPLENDA® No Calorie Sweetener, Granulated

SPLENDA® Granulated measures cup for cup like sugar so it’s easy to substitute in most recipes. When you replace sugar with SPLENDA® Granulated, it’s important to understand the many roles sugar or other sweeteners, such as honey, have in cooking and baking.

This knowledge will help you determine which of your favourite recipes can be easily adapted for use.

We all know that sugar and other caloric sweeteners, such as honey, molasses, brown sugar and maple syrup add sweetness in recipes but they can also:

  • Give structure, texture and volume
  • Caramelize and add browning
  • Help retain moistness in baked goods
  • Act as a preservative, keeping foods fresh for a longer period of time

In general, SPLENDA® Granulated works best in recipes where the main role is to provide a sweet taste. For example, SPLENDA® Granulated works well in fruit pie fillings, cheesecakes, sweet sauces and glazes.

In recipes where the amount of sugar is quite high or where browning is a vital element, such as crème brulee, we would not recommend a complete substitution of sugar with SPLENDA® Granulated.

Simply follow these tips for using SPLENDA® Granulated in your recipes and you’ll be able to enjoy your favourite baked goods and dishes with less calories and carbohydrates.

  • Baked goods will cook faster. For cookies and brownies, check your baking 3-5 minutes earlier than the baking time given in the recipe, and for cakes, check 7-10 before the suggested bake time.
  • The golden brown colour of baked goods comes from the caramelization of sugar. SPLENDA® Granulated does not caramelize like sugar, so to achieve better browning, lightly spray your batter or dough with cooking oil before putting it in the oven.
  • Yeast breads need a small amount of sugar to activate leavening. Use at least 2 teaspoons of sugar in recipes requiring yeast and use SPLENDA® Granulated as a replacement for the rest of the sugar in the recipe.
  • To get a better rise out of your baked goods, add ½ cup of non-fat dry milk powder and ½ teaspoon of baking soda for every 1 cup of SPLENDA® Granulated.
  • When making candies or other confections that are high in sugar, replace 25% of the sugar called for in the recipe with SPLENDA® Granulated. You can do this by making a blend of sugar and SPLENDA® Granulated. For example, if the recipe calls for 1 cup of sugar, you could use ¼ cup of SPLENDA® Granulated and ¾ cup of sugar.
  • Fresh-baked goods should be enjoyed within 24 hours. If you plan to keep your baked goods longer, simply wrap well and freeze.

Cooking and Baking with SPLENDA® Brand Brown Sugar Blend

It’s easy to substitute SPLENDA® Brown Sugar Blend for brown sugar because a ½ cup of SPLENDA® Brown Sugar Blend replaces 1 full cup of brown sugar. While you’re using less volume, it’s just as sweet because SPLENDA® Brown Sugar Blend is a mix of brown sugar and SPLENDA® Brand Sweetener (sucralose).

Use the following tips when baking or cooking with SPLENDA® Brown Sugar Blend:

  • Yeast breads and other baked goods rise well because there is enough sugar in SPLENDA® Brown Sugar Blend to activate the yeast.
  • Cookies may not spread out as much when baking. Achieve a better spread by flattening the dough with your fingertips or a fork prior to baking.
  • Heating SPLENDA® Brown Sugar Blend for melting or caramelizing may require the addition of a small amount of water to help it dissolve more readily. Caramelization will occur more quickly with SPLENDA® Brown Sugar Blend than with pure sugar so watch your saucepan carefully to avoid overheating or burning.
