Fruit Loaf with Lemon Cheese Spread

This recipe is:

1 cup (250 mL) all-purpose flour

1 cup (250 mL) whole wheat flour

1/2 cup (125mL) SPLENDA® No Calorie Sweetener, Granulated

1 tbsp (15 mL) baking powder

1 and 1/2 cups (375 mL) skim milk

2 tsp (10 mL) cinnamon

1 tsp (5 mL) allspice

1/2 tsp (2 mL) salt

3/4 cup (175 mL) mixed candied fruit

1/2 cup (125 mL) raisins

1 egg

1 tsp (5 mL) grated lemon rind

1/4 cup (50 mL) vegetable oil


Mix flours, SPLENDA® Granulated, baking powder, cinnamon, allspice and salt in a large bowl. Add fruit and raisins.

Whisk together egg, milk, vegetable oil and lemon rind. Stir into flour mixture, stirring just until dry ingredients are moistened.

Spread evenly in greased 8 X 4 inch (22 X 11 cm/ 1 1/2 L) loaf pan. Bake at 350°F (180°C) for 45 to 50 minutes or until tester inserted in centre comes out clean.

Cool in pan for 10 minutes. Remove from pan and cool on rack. Wrap well and store in refrigerator.

Serve with Lemon Cheese Spread.
