Raspberry Vinaigrette Recipe

Add all the ingredients except the oil to a food processor, pulse to combine the ingredients.

With the food processor on high, slowly add the oil in a stream until the mixture becomes creamy. Add the salt and pepper.

Mix with your favourite greens.

Ingredients

  • 1 cup (250 mL) sunflower oil
  • 1/2 cup (125 mL) fresh or frozen raspberries
  • 2 shallots
  • 2 cloves of garlic
  • 1 tbsp (15 mL) Dijon mustard
  • 2 tbsp (30 mL) SPLENDA® No Calorie Sweetener- Granulated
  • 4 tbsp (60 mL) raspberry vinegar (or balsamic vinegar)
  • Salt and pepper to taste
