Ingredients

1 pkg (10 oz/300 g) low-fat silken tofu

2 cups (500 mL) frozen blueberries

1 banana, peeled and cut in 1-inch chunks

1 1/2 cups (375 mL) pomegranate juice

1 tbsp (15 mL) SPLENDA® No Calorie Sweetener, Granulated

2 tbsp (30 mL) ground flaxseed

Directions

Combine all the ingredients in a blender or food processor; blend or process until smooth and creamy, about 45 to 60 seconds

Serve immediately or refrigerate for a day or two. If you make this ahead, shake well or blend briefly before serving

 
Variations:

No frozen blueberries? Add a few ice cubes and use 2 cups (500 mL) of fresh blueberries or strawberries. Process until thick and creamy

Instead of tofu, use 1 1/4 cups (310 mL) nonfat vanilla or plain yogurt for a dairy-licious drink

Combine chunks of cantaloupe, honeydew or watermelon with blueberries (fresh or frozen), strawberries and or raspberries

Instead of pomegranate juice, substitute with any of the following : apple, cranberry, grape, mango or orange juice
