Strawberry Lemon Shortcakes

This recipe is:


1 1/2 cups (375 mL) all purpose flour

3 tbsp (45 mL) SPLENDA® No Calorie Sweetener, Granulated

1 1/2  tsp (7 mL) baking powder

1/4 tsp (1 mL) fine salt

1 tbsp (15 mL) finely grated lemon zest

2 tsp (10 mL) freshly grated fresh ginger

6 tbsp (90 mL) unsalted butter, cold

1/2 cup (125 mL) 2% milk

milk for brushing shortcakes



1 cup (250 ml) whipping cream

1/4 cup (60 mL) sour cream

3 tbsp (45 mL) SPLENDA® No Calorie Sweetener, Granulated

1 tsp (5 mL) finely grated lemon zest


3 cups (750 mL) strawberries, hulled and quartered

3 tbsp (45 mL) SPLENDA® No Calorie Sweetener, Granulated

1 tsp (5 mL) finely grated lemon zest

1 tsp (5 mL) finely grated fresh ginger



Preheat oven to 375°F (190°C) and line a baking tray with parchment.

Combine flour, SPLENDA® Granulated, baking powder and salt in a bowl. Add lemon zest and grated ginger and stir. Cut cold butter into small pieces and cut into flour mixture until a rough, crumbly texture form. Stir in milk and blend until pastry forms a ball.

Turn out dough onto a lightly floured surface. Flatten dough and fold over in half and repeat (this builds a lovely flakiness). Shape dough into a circle and cut into 6 wedges. Arrange shortcakes on baking tray and brush with milk.

Bake for 15 minutes until tops of shortcakes are a light, golden colour. Allow to cool before serving.


For filling, whip cream to soft peaks and fold in sour cream, SPLENDA® Granulated and lemon zest.

Chill until ready to serve. For fruit, toss strawberries with SPLENDA® Granulated, lemon zest and fresh ginger and chill until ready to serve. 

To assemble, split a shortcake in half and place bottom half on a plate. Dollop with cream and top with 1/2 cup (125 mL) of strawberries. Top with other half of shortcake and repeat with remaining shortcakes. Serve immediately.
