Ingredients
2 cups 1 % low-fat buttermilk
2 tablespoons Splenda® Granulated Sweetener
2 large eggs
1 tablespoon pure vanilla extract
2 tablespoons butter, melted
¼ teaspoon salt
2 cups all-purpose flour
4 teaspoons baking powder
1 cup Splenda® Granulated Sweetener
1 tablespoon ground cinnamon
Optional toppings:
Zero-sugar maple syrup
Zero-sugar whipped cream
Sliced strawberries

Instructions
In a bowl, whisk buttermilk, Splenda Sweetener and eggs until well combined. Add in vanilla, butter, and salt. Sprinkle the flour and baking powder on top, and mix just until incorporated – do not over mix. Let batter set 5 minutes while waffle iron heats up.
Spray a classic waffle iron with nonstick cooking spray. Scoop about ¼ cup batter into each compartment. Cook waffles according to waffle iron’s directions. Churro waffles are really good a little more toasty and crunchy than normal.
Remove waffles and spray with butter-flavored nonstick cooking spray (or brush with butter).
Mix 1 cup Splenda Sweetener and cinnamon together in a bowl, and sprinkle on both sides of each waffle.
