Cranberry Almond Spinach Salad

Instructions

  1. In a saucepan, add all ingredients for dressing. Stir together and cook until warm and sweetener is dissolved. Remove from heat. Stir in sliced red onion and cranberries. Let cool slightly.
  2. In a big bowl, add fresh spinach. Drizzle dressing mixture onto spinach and toss. Sprinkle with toasted almonds and serve!

Note

  • Spinach can be made in a reduced size for an individual serving! Reduce recipe by ¼, and serve with a grilled chicken breast or seared salmon or steak. Delicious!
  • If red onions are not available, sliced green onions make an excellent swap.
