Instructions

  1. Preheat oven to 350°F. Spray two 9” x 5” loaf pans with cooking spray.
  2. In a bowl, combine pumpkin puree, yogurt, sour cream, eggs, and vegetable oil. Mix until smooth.
  3. Add flour, Splenda Sweetener, baking powder, and pumpkin pie spice; stir to combine. Add raisins and walnuts; stir until just incorporated.
  4. Spread batter into prepared pans. Bake for 40–50 minutes or until a wooden pick inserted in the center comes out clean.
  5. Cool completely, then cut each loaf into 8 thick slices.
