Keto Orange Cream Cookie Sandwiches

Instructions

To make the filling:

  1. In bowl of stand mixer fitted with whip attachment, beat cream cheese and butter on medium speed until smooth, about 3 minutes. Add Splenda Monk Fruit Sweetener and orange zest and increase to high speed. Beat, scraping down sides as needed, until filling is light and fluffy, about 2 minutes. Cover with plastic wrap and refrigerate until ready to use.

To make the cookies:

  1. Preheat oven to 350°F and line two rimmed baking sheets with parchment paper. In a medium bowl whisk together almond flour, baking powder and salt. In a separate large bowl beat together butter and Splenda Monk Fruit Sweetener until combined. Beat in orange extract, egg and food colouring until smooth, about 30 seconds. Add flour mixture and fold until just combined.
  2. Roll dough into balls about 1 tablespoon in size. Evenly space dough balls onto prepared baking sheet and press into ½-inch thick disks. Bake, rotating baking sheets halfway through, until edges of cookies are lightly browned, about 12-15 minutes. Let cool for 30 minutes before filling.
  3. Place ½ tablespoon of filling on one cookie and top with second cookie, pressing so filling reaches the edges.

  • Cookies can be stored in an airtight container and refrigerated for up to 1 week.
