Instructions
To make the topping:
In a small bowl, mix 4 tablespoons Splenda Stevia Sweetener with 1 teaspoon cinnamon and set aside.
To make the apple pie bombs
In a skillet sprayed with nonstick cooking spray and heated to medium, add apples. Cook 5 minutes. Add water, butter spread, Splenda Stevia Sweetener, spices and salt. Cover and simmer, stirring occasionally, 15 minutes. Remove cover, stir and cook 10 more minutes until apples are soft, fork-tender, and juicy. Let cool.
Carefully slice each refrigerated biscuit in half horizontally, so you now have 16 biscuits. Using your fingers, gently press each out to a 4-inch circle. Spoon a tablespoon of apple filling into the center of each circle, then use your fingers to fold the sides together, pinching in the middle so you have a biscuit ball.
Work in batches, and place 4 – 6 Apple Pie Bombs into the air fryer at a time (depending on the size of your fryer). Give them a light coating of cooking spray. Cook each batch at 350ºF for 6 – 8 minutes (making sure the biscuit is done in the middle).
Gently remove the balls from the air fryer, then brush them with melted butter spread, and sprinkle on cinnamon-sweetener mixture.
Repeat for the remaining batches. Set on a wire rack to cool, and serve immediately!
