Chocolate Chip Meringue Crisps

  1. Preheat oven to 300°F. Line two baking sheets with parchment paper.
  2. Bake walnuts in a shallow pan, stirring occasionally, for 5 minutes or until toasted.
  3. In a bowl using an electric mixer, beat egg whites and vanilla extract on high speed until foamy.
  4. Add Splenda Sugar Blend, 1 tablespoon at a time, beating until stiff peaks form. Stir in walnuts and chocolate chips.
  5. Spoon rounded teaspoons of mixture onto baking sheets.
  6. Bake for 15 minutes.
  7. Reduce oven temperature to 200°F. Bake for one hour and 45 minutes.
  8. Cool slightly, then transfer to a wire rack to cool completely.
