Ricotta Cheesecake

To make the crust:

  1. Spray bottom of a 9” springform pan with cooking spray.
  2. In a bowl, combine graham cracker crumbs, butter, and Splenda Sweetener; stir until crumbs are evenly moist. Press mixture into bottom of prepared pan.

To make the filling:

  1. Preheat oven to 350°F.
  2. In the bowl of a food processor, combine all ingredients. Process about 3 minutes or until smooth, stopping occasionally to scrape down sides of bowl. Pour mixture into prepared crust.
  3. Bake for 25–30 minutes or until almost set. Turn oven off; leave cheesecake in oven 30 minutes with door partially opened.
  4. Cool in pan on a wire rack, then cover and refrigerate at least 1 hour before serving.
